To prepare for the upcoming Spring Festival, residents in Kaihua county, Quzhou, are busy making sheet jelly, a local delicacy.

Rice pulp is used to make Kaihua sheet jelly after being steamed and dried.

Making sheet jelly is a Kaihua tradition. There is a custom of cooking sheet jelly with pork to celebrate the Spring Festival in the countryside. Every year, residents start making sheet jelly after Frost's Descent, the 18th solar term of the year, said Wang Yuejin, a resident of Fulin village in Kaihua county.

Fulin sheet jelly is a kind of flat rice-noodle. It has a long history and requires exquisite craftsmanship. Fulin sheet jelly craftsmanship has been listed as an intangible cultural heritage item in Kaihua.

In addition, residents in Fulin village can earn money by making sheet jelly.

More than 50 of the 184 households in Fulin village make sheet jelly. Each household can produce more than 200 kilograms of it every year, bringing in more than 400,000 yuan ($57,421) in income for villagers.
