Quzhou dishes win provincial recognition

Changshan, a county in Quzhou, East China's Zhejiang province, won the title of the hometown of spicy dishes in Zhejiang at the first World Conference of Zhejiang Cuisine in China held in Hangzhou on Sept 12.

Culinary enthusiasts say the food in Changshan features spicy flavors, making it a unique experience among the more neutral dishes of Southern China.

In recent years, the county has identified its 10 most representative specialty dishes and dug out the stories behind them.

Take the speciality dish called Jiangjun Fish, or General Fish, for example. It is a regular course in Changshan, celebrated for its spicy and fragrant taste and rich nutrition.

Legend says that more than 1,400 years ago, He Fanying, a general in ancient China, favored a dish made by the fish grown in his hometown of Changshan. He not only caught the fish himself, but also cooked them to serve his guests.

In order to commemorate the benefits he brought to local residents and his honest and upright manner, Changshan's natives named the course General Fish.

Another county in Quzhou – Kaihua – won gold award at the event, helped along by the exquisite design of the exhibition pavilion that showcased its delicacies.

As distinct from Changshan, Kaihua's dishes are typical of Southern China's more neutral taste and steamed Qingshui fish with milky soup is the most representative.
