Savor Quzhou New Year's flavor of rice flour noodles
Rice flour noodle is an indispensable delicacy in the villages of Quzhou's Kaihua during the Spring Festival, which is used to entertain honored guests.
Kaihua villagers have reserved the tradition of making rice flour noodles during the traditional Chinese festival for a long time, but they only make it for themselves and they are not for sale.
Boiling the rice flour noodles with several slices of preserved meat is a real treat, especially during chilly winter.
Here's the making process.
After soaking a proper amount of rice for 24 hours, local villagers grind them into rice milk by a stone mill and then lay out a thin layer of rice milk over clothing in a steamer.
Several minutes later, they carefully strip the steamed thin rice flour sheets from the clothing in case of ruining the delicate sheet and hang them over bamboo sticks in the bright sunshine.
After having them almost completely dried, they start cutting the sheet into uniform strips before drying them up in the sun, which makes the rice flour noodles capable of being reserved for a long period of time.
